Chicken coconut milk curry


This is a fun and festive meal to do with friends. Make the Chicken coconut milk curry and Basmati rice and ask all your friends to bring toppings : nuts (almonds, unsweetened coconut, cashews, peanuts), fruit (bananas, mangoes, pineapple) and vegetables (onions, tomatoes, peppers)


3 T. olive oil

1 med. onion, chopped

2 cloves garlic, minced

2-3 T. curry powder

1 tsp. cinnamon

1 tsp. paprika

1 bay leaf

1/2 tsp fresh grated ginger

1 tsp. sugar

salt to taste

2 T. tomato paste

1 can of coconut milk (I used the lite) DSC04669

5 boneless chicken breasts, cut into cubes.

1. Heat oil in skillet. Saute onions until golden. Stir in garlic, curry,

cinnamon, paprika, bay leaf, ginger, sugar and salt-continuing stirring for

2-3 mins.  DSC04666

2. Cut chicken breast. DSC04665

3. Add chicken pieces and cook.DSC04667

4. Add remaining ingredients: tomato paste & coconut milk. DSC04670

5. Remove bay leaf and serve. You can make the sauce ahead of time and as the sauce seats the flavors blend so well together.
