Ice cream cake

Ice cream cake is so easy to make. Be creative and add any flavors of ice cream you like. I do 2 layers of Ice cream. You can do 3 ! You can even substitute Oreo cookies for another kind of cookie like Butter cookies or graham crackers. Fun for a birthday cake or a summer cake. Delicious all the time !

INGREDIENTS

15 Oreo cookies
1 tablespoon milk
8 -9 ice cream sandwiches, depending on size
1 pint mint chocolate chip ice cream
1 pint vanilla frozen yogurt

whip cream for decoration
Any decorations on top: chocolates, M & M, cookies (be creative)
PREPARATION 1. Coat bottom and side of a 9-inch round springform pan with nonstick cooking spray. Line side with waxed paper, using spray to help adhere to pan. Trim paper to height of pan. DSC04019
2. Finely crush 12 Oreos in a food processor. Add milk; pulse just until mixture holds together. Set aside. DSC04018
3. Unwrap 4 ice cream sandwiches. Working quickly, cut each in quarters (cut once horizontally, once vertically).DSC04021DSC04022

4. Stack strips of sandwiches on end, packing them snugly together, around wax-paper-lined pan. Repeat with remaining sandwiches to form a stand-up edge. DSC04020
5. Spoon cookie crumbs into center of pan; press firmly over bottom. Freeze 1 hour.DSC04025
6.  Remove 1 flavor of ice cream at a time from the freezer and let soften for 15 minutes at room temperature. Put layer of ice cream- Freeze- put another layer of ice cream. Until done !DSC04028
7. Top with Whip cream and any decorations you would like. Return to freezer; freeze overnight.
8. To serve, remove side of pan, then waxed paper. Cut into wedges.DSC02268  This is another we had made.
