Beet salad is one of my favorites. I grew up eating it.
Very simple to make and so flavorful.
5-6 beets bought in bulk
Cook beets in water until you can have a cake tester go through. Drain Water and cool.
When cool, remove the thin skin on beets and cut in round slices. Put in a salad bowl.
Make the French vinaigrette. Add a few tablespoons on top. Add Fresh mint, parsley and a few olives.
Voilà ! Délicieux !
