Have you ever wanted a challenge in your cooking ? I ALWAYS wanted to try to make a tiramisu, this Italian dessert – and today was the day. I had to bring a dessert to some friends, had lady fingers and Voilà !


6 egg yolks
1 cup sugar
1 1/4 cup mascarpone cheese
1 3/4 cup heavy whipping cream
2 -12 oz packages Italian Lady fingers
1/2 cup cold espresso
1/4 cup coffee flavored Liquor (optional)
1 tbsp cocoa for dusting

DSC02791 1. Combine egg yolks and sugar in the top of a double boiler,  over boiling water.  Reduce heat to low, and cook for about 10 minutes, stirring constantly.  This is called sabayon.

DSC02792 2. During that time make a good cup of coffee

 DSC02794 3. Remove from the heat and whip yolks until thick and lemon colored.

DSC027974 . Add Mascarpone to whipped yolks, beat until combined.

DSC027965 . In a separate bowl, whip cream to stiff peaks.

DSC027996. Gently fold the whipped cream in the mascarpone sabayon mixture and set aside.

DSC028017. Dip the lady fingers into the cold coffee enough to get them wet, do not soak them! I did not put any liquor in but if you did you would add it to the coffee at this stage.
DSC028028. Arrange the lady fingers in the bottom of a 8 inch square baking dish (or 6×9)
DSC028049. Spoon half the mascarpone cream filling over the lady fingers.
Repeat process with another layer.Refrigerate 4 hours or overnight.
DSC0281510. Dust with cocoa before serving.
